Layers of beef mince and macaroni smothered in a cheese sauce make this dish a family favourite.

  • 500 g lean mince

  • 3 large onions

  • 2 ripe tomatoes, chopped

  • 500 g macaroni

  • 225 g butter

  • 5 eggs

  • 3 cups grated cheese

  • 500 ml milk

  • 2 tablespoons olive oil

  • 4 tablespoon Worcestershire sauce

  • salt and pepper

  • mixed dried herbs of your choice

  • 8 tablespoons flour

  • 2 tablespoons mustard

  • bread crumbs

  • smoked paprika

  • spray and cook (optional)

Method – MINCE

  • In a frying pan with a lid, add butter and a little olive oil. Add the onions, garlic and sauté.
  • Add chopped tomatoes and the mince and sauté until the meat is brown. Season to taste. Add the soya sauce, mix and cover, make sure to lower the heat and simmer for 30 minutes.
  • Add the Worcestershire sauce, stir and cover with lid. Lower the heat and simmer for 30 minutes. Do not let it get too dry, add a little water to keep it moist and to ensure it does not burn. When the meat is cooked, remove from hear and allow to cool.

  • While the mince is cooking, cook the macaroni in boiling water with a little salt and olive oil for 10 minutes. Strain and rinse under cold water. Set aside.
  • In the meantime, preheat your oven to 375 degrees F / 190 degrees C.
  • In a medium sized pot, on medium heat, melt the butter.  When the butter has melted, add the flour and stir continuously. Add the mustard, and stir well.
  • Whisk in the milk and stir until it is a smooth creamy mixture. Add the 4 eggs one at a time, whisking continuously.
  • Season with salt and pepper.
  • Spray or grease your oven with butter or oil. Sprinkle with crumbs.
  • To the mince, add in 1 cup of grated cheese and 1 egg and mixed herbs.  Mix well.
  • Add 2 cups grated cheese to the cooked macaroni.
  • In your prepared oven dish, add mince to form your first layer. Add the next layer of the macaroni mixture. Repeat the layers.
  • Spread the creamy topping sauce on top and sprinkle with paprika.

  • Bake uncovered in the oven for 20 to 30 minutes.
