The perfect tea-time treat: Classic Coffee Cake Recipe

Coffee cake used to mean having a cake to go with your cup of coffee but this evolved into adding instant coffee powder into your sponge cake mixture.

This is a simple, light coffee cake recipe is made using ingredients you already have at home. Perfect for a tea party with a few friends.

This classic coffee cake is moist, delicious and super easy to make.


  • 2 eggs

  • 2 cups flour

  • 2 teaspoons baking powder

  • pinch of salt

  • 1 1/2 cups milk

  • 2 teaspoons vanilla essence

  • 1 1/2 cups sugar

  • 2 tablespoons instant coffee

  • 200 grams butter


  • Preheat oven to 180 degrees Celsius.
  • In a mixing bowl, whisk butter and sugar together.
  • Add in eggs and and whisk for about 2 minutes, until soft.
  • Add baking powder and salt to the mixture.
  • Mix the milk and vanilla essence together in a cup.
  • Alternating, add milk then flour to the mixture.
  • Bake for 20 minutes at 180 degrees.
  • Remove the cake from the oven and allow to cool completely before icing. Decorate the cake with topping of your choice.


  • To make a simple chocolate ganache, melt a slab of chocolate and mix with cream. Drizzle over the cake.
  • Serve with cream or ice-cream.
