Pile On The Mexican Toppings To Make A Meal Out Of Nachos

Nachos can be one of the simplest Mexican meals, it’s prepping the toppings which takes the time but don’t skip this as they make all the difference. Start off with your basic nachos then pile on spicy salsa, tangy cheese, gooey guacamole and a swirl or two of sour cream to give that south-of-the-border kick to your dish.

You can use either beef or chicken as your main filling. This particular recipe uses chicken but you also can adapt the dish and omit the chicken for a vegetarian option.

This easy nacho recipe has a unique twist and is full of flavour.

Ingredients

  • 1 packet tortilla chips (you also can use Doritos)

  • 1/2 block of grated cheddar cheese

  • a few cubes of feta cheese

  • chicken breast fillets

  • 1 ripe avocado

  • 2 tomatoes, chopped

  • 1 onion

  • 2 green chillies

  • peppers (red, yellow or green)

  • mushrooms

  • seasoning – salt, pepper, paprika, mixed herbs,

  • lemon juice

  • ginger and garlic mix

  • coriander

  • sour cream

Method

  • First prepare your main filling. Spice the chicken with chilli powder, paprika, ginger and garlic, mixed herbs, salt and pepper to create the Mexican flavour. Fry until chicken is cooked through.
  • Next prepare your toppings. Finely slice the mushrooms and peppers. You can use any veggies you like.
  • Third is salsa. You can buy a ready-made salsa sauce or make it from scratch. To make salsa, add tomatoes, onions, green chillies into a food processor. Blend and add salt, pepper and paprika.
  • Layer your tortilla chips onto foil and lay the foil onto an oven-proof tray. Add grated cheddar cheese. Add more nachos on top and then add your chicken and prepared veggies followed by your salsa. Add another layer of nachos on top and then more grated cheddar cheese. Top with feta.
  • Bake until cheese melts. You can also put it in an air-fryer for a few minutes and you will get the same result.
  • Serve with a guacamole dip. To make guacamole, smash your avocado in a bowl, add lemon juice, salt, pepper and fresh coriander.
  • Serve topped with sour cream.
