Mouth-watering: Baked Cheesy Chicken Roll Surprise Recipe

This recipe might seem daunting but it is very easy. The chicken fillets are flattened and then the filling is added and rolled up to create the perfect surprise inside.

This dish is lovely served with golden potatoes, baked in the oven using coconut oil.

Chicken fillet stuffed with bacon and cheese and baked to perfection.


  • 8 to 10 chicken breasts

  • 200 g bacon

  • 3 tomatoes

  • 2 cups grated cheese (mozzarella works perfectly) or sliced cheese of your choice.

  • 410 g tin tomatoes

  • 2 slices feta cheese (crumbled)

  • Cajun spice

  • mixed herbs – origanum is perfect

  • black pepper

  • toothpicks


  • Preheat oven to 400 degrees F / 200 degrees C.

  • Halve each chicken breast fillet. Place each breast between sheets of plastic wrap and pound with a meat mallet or edge of small saucer until required thickness.
  • Sprinkle chicken breasts with Cajun spice, add the bacon slices, cheese and tomatoes. Season with salt and pepper.
  • Roll up each seasoned chicken breast with bacon, cheese and tomatoes inside. Tuck in ends and fasten with toothpicks.
  • Place the stuffed chicken rolls into a prepared dish. Add the tin of tomatoes. You can sprinkle more grated cheese on top if you like it cheesy. Sprinkle with feta. Season with black pepper and mixed herbs to your taste.
  • Place uncovered in the oven for 40 minutes, or until chicken is cooked and tender.
