We have survived the elections; what a week that was. Time to focus the finer things in life again: good food and good company, and with the grocery specials at some of our supermarkets this week, you can do just that.

Try one of our suggestions before reaching for the Uber Eats or Mr Delivery app this week. Most of the suggestions will save on time, but we’ve included something more extensive for the weekend too.

Woolworths

Cashew nut chicken for under R120

The Cashew Nut Chicken meal option consists of chicken strips with noodles in a sesame oil, chilli and coriander sauce, as well as wok-fried red pepper, onion petals and spring onion.

It sells for R67.99 for 400g, but you save R200 when you buy two portions. It’s ready to serve in under 3 minutes, and can be teamed up with any of their veggie side dishes, such as pumpkin fritters.

Checkers

Sweet and sour pork for R160.00

Checkers has improved most of their ready-meals, and added new recipes to the mix as well.

They now offer 21 mouth-watering meal kits every week. The sweet and sour pork with sticky jasmine rice caught our eye this week, and it sells for only R159.99 for a two-serving meal.

Alternatively, get the beef stroganoff with zucchini and spaghetti for the same price. The boxes come with a recipe card and a link to an instructional step-by-step video.

Pick ‘n Pay

Hearty winter soups for under R130

Pick ‘n Pay has a variety of hearty winter soups on special this week, including rustic minestrone, Moroccan lamb, and chicken and broccoli soup, between R35.99 and R50.99.

Alternatively, make your own soup. Buy any 2 packets of selected fresh vegetable and save. Then just add lentils for R13.99, coriander for R14.99, onions, tomatoes and stock to make your own winter warmer.

Oven-baked chicken breasts for underR100

Spar is selling chicken breast fillets for R59.99. If you some extra time to spare this week, perhaps consider an oven-baked dish.

Simply add paprika, thyme, garlic powder and parsley to your trolley as well, and the secret ingredient: brown sugar. Mixing a bit of brown sugar into the season guarantees the juiciness.

Oven-baked chicken breasts

Ingredients

  • 4 chicken breasts
  • 2 tsp olive oil
  • 1 1/2 tbsp brown sugar
  • One tsp paprika
  • 1 tsp dried oregano or thyme, or any other herb of choice
  • 1/4 tsp garlic powder
  • 1/2 tsp each salt and pepper
  • Finely chopped parsley

Method

  • Preheat oven to 220 degrees Celsius on a standard oven, or 200 Celsius on a fan- or convection oven.
  • Pound chicken to 1.5cm at the thickest part using a rolling pin, meat mallet.
  • Mix the seasoning ingredients.
  • Line a baking tray with foil and baking paper. Place chicken upside down on tray. Drizzle chicken with about 1 teaspoon oil. Rub over with fingers and sprinkle with seasoning.
  • Flip chicken. Drizzle with 1 teaspoon oil, rub with fingers, sprinkle with seasoning, covering as much of the surface area as you can.
  • Bake 18 minutes, or until surface is golden or until internal temperature is 75 degrees Celsius using a meat thermometer.
  • Remove from oven and immediately transfer chicken to serving plates.
  • Wait 3 to 5 minutes before serving, garnish with freshly chopped parsley if desired. Can be served with garlic rolls or veggies of choice.
